Festive Granola

festive granola
 

This delicious festive granola makes the perfect bowl to start your day on cold winter mornings - crunchy, heartening and christmassy. Pop it in a jar when you’ve made it and it’s great gift for friends and family, or just keep it all for yourself!

 
Ingredients
300 g inn muesli base, or deluxe muesli if you're feeling indulgent 
150 g inn walnut quarters (no chopping necessary!)
50 g inn flaked almonds (again - no chopping!) 
50 g inn pumpkin seeds (we're doing so well on the lazy cook front... no chopping!)
150 g inn dried fruit (you can mix it up as you wish, but for our festive mix, we used dates, figs, and sultanas)
2 - 3 tsp. inn ground cinnamon
Half a cup of maple syrup
Half a cup of coconut oil / butter 

Method
1. Preheat the oven to 200°C. 
2. Warm the syrup and coconut oil/butter in a pan. You can also do this in the microwave. 
3. Stir in the muesli, cinnamon, nuts and seeds until coated.
4. Spread the mixture onto 2 baking trays. Bake for 20 minutes until golden. (We like ours extra crunchy so we often leave it for a few extra minutes).
5. Remove from the oven and toss in the dried fruit.
6. Allow to cool completely - no sneaky sticky fingers - it's worth it! 
7. Transfer to our cotton bags or jars. Seal and label the jars for special friends and family, or keep it all for yourself! The granola will stay crispy and crunchy for weeks if kept in an airtight container.
